Raw Banana Ice Cream with Grapes and Almond Crumbs

 

A Ten Day Raw Food Experiment: Day 8

Here’s everything I ate today:

Meal 1
1 banana
1 apple
1 TBSP almond butter
tea

Meal 2
romaine salad w/ 1 TSP olive oil, 1/8 cup pepita seeds, parsley, cilantro.

Meal 3
pumpkin cracker bread w/ hummus dip
1 cup grapes

Meal 4
3 clementines
dried grape fruit roll

Meal 5
banana ice cream

Meal 6
big ass salad w/ 1/2 TSP olive oil, 1/8 cup pepita seeds, parsley, cilantro.

Comments

After eating raw foods for a week, I found myself craving something sweet so I made up a raw banana ice cream – 2 frozen bananas, 2 tablespoon raw agave nectar, 1 tablespoon raw almond butter (blended in a food processor), garnished with grapes and 1 tablespoon crushed raw almonds. It was pretty decent. Next time I’ll throw in a clementine to give it some tangy zazz and to improve it’s color.
